This involves studying the accumulation of these compounds in relation to the identification and expression of genes and enzymes involved in the biosynthesis of secondary metabolites. The objective is to investigate their biological properties, particularly in developing innovative food applications with health benefits and assessing the inhibitory effects of extracts, especially against enzymes associated with major human diseases such as Diabetes and Alzheimer's. As a professor at UALG, she has been responsible for teaching a broad range of courses across various disciplines. In her research lab, she has supervised 3 postdoctoral researchers, 6 PhD candidates, 20 master’s students, and 30 undergraduate trainees. She has coordinated and participated in multiple research projects, which have led to numerous publications in internationally recognized, peer-reviewed scientific journals, where she is either the author or co-author. Additionally, she has contributed to scientific conferences by delivering lectures and serving on both scientific and executive committees. Her body of work includes 67 international articles indexed in ISI and 10 book chapters, reflecting the high quality and volume of her scientific contributions.
